Cocoa d’Amici, Ltd., located on the Olympic Peninsula in Washington, was founded by chocolatier, Linda Moats in 2010. Linda’s previous career as a chemical oceanographer led her on travels around the world where she met a fellow oceanographer in 1992 whose hobby was making chocolate confections with a side business of chocolate-making supply distribution. After tasting a rare treat of Florifonia truffles (triple citrus white chocolate) in the middle of the Pacific Ocean on board a research ship, Linda asked her colleague to teach her how to make truffles. This mentorship blossomed into a friendship that remains strong today. Linda regularly joins her colleague’s family to try new recipes for chocolate confections. Until 2010, when Cocoa d’Amici, Ltd. began operations, Linda made fine quality chocolates to give to friends and family. Thus the symbol that the name represents loosely translated as “fine chocolates for good friends”.
Linda had an interest in culinary arts from a young age and in combination with her chemistry education, has experimented with the making of cordials and other key ingredients in her truffles. “I use as many natural and organic ingredients as possible. Most truffles have an ingredient list of three: chocolate, cream, flavor.”
With a desire to create new flavors and years of experience, Linda offers many unique chocolate confections such as salt caramel chocolate tarts, crème brulee truffles, and vegan truffles.
